Berry Ricotta Pizza
Ingredients
1 16-ounce loaf frozen sweet bread dough, thawed
1 cup ricotta cheese
3 tablespoons sugar
1/2 teaspoon vanilla
1/2 teaspoon finely shredded lemon or orange peel
2 to 3 cups red raspberries, blackberries, blueberries, and/or sliced strawberries
1 tablespoon powdered sugar
Directions
1. Press bread dough into a greased 13-inch pizza pan. Prick generously with a fork. Bake in a 375 degree F oven for 20 to 25 minutes or until light brown. Cool crust completely on a wire rack.
2. Meanwhile, for filling, in a small mixing bowl stir together ricotta cheese, sugar, vanilla, and lemon or orange peel.
3. Spread filling over crust. Top with desired berries. Sift powdered sugar over berries. Serve immediately. Makes 12 servings
Make-ahead tip: Spread the ricotta mixture over the baked and cooled crust and chill for 3 to 4 hours. Just before serving, top with berries.
