Chocolate Cashew Teacakes
Try this sweet and salty version of a holiday favorite for your cookie platter.
Yield: 5 dozen cookies
Ingredients:
3/4 cup Land O Lakes® Butter, softened
1 cup sugar
3 (1-ounce) squares unsweetened baking chocolate, melted, cooled slightly
1 2/3 cups all-purpose flour
1 1/2 cups finely chopped cashews
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
Powdered sugar
Directions:
Heat oven to 350 F. Line cookie sheets with parchment paper; set aside.Combine butter and sugar in large bowl; beat at medium speed until creamy. Add egg; continue beating until well mixed. Add melted chocolate; beat until well combined. Reduce speed to low; add flour, chopped cashews, cinnamon and salt. Continue beating until dough forms.
Shape dough into 1-inch balls. Place 2 inches apart onto prepared cookie sheets. Bake for 10 to 12 minutes or until just set. Cool 1 minute on cookie sheet; roll cookies in powdered sugar. Place onto wire cooling rack. Cool completely. Roll in powdered sugar again. Store in food storage container with tight-fitting lid.
