Citrus Dill Lobster Roll

Ingredients:

1 French-style baguette
10-12 ounces (300-350 mL) fresh lobster meat
2 tablespoons (30 mL) mayonnaise
2 ounces (175 mL) fresh dill
Juice from 1/2 lime
Juice from 1/4 lemon
Pinch of salt
Fresh ground black pepper
Lettuce (optional)




Directions:

Slice the baguette ¾ of the way through; remove the inside from the top half of the baguette, leaving it hollow. Mix lobster, mayonnaise, dill, citrus juices, and salt and pepper to taste. Spoon onto the bottom half of the baguette. Top with lettuce if desired. Cut and serve. Makes 2-4 servings.
